Sausage, Mushroom and Red Onion Pizza
Purchased fresh pizza dough
½ cup purchased marinara sauce
3 Dibrova Chicken & Spinach sausages, sliced thinly
10 mushrooms, washed and sliced
½ small red onion, thinly sliced
1 Tbsp. olive oil
1-1/2 Cups grated mozzarella cheese
2 Tbsp. finely grated parmesan cheese
2 Tbsp. Italian flat leaf parsley, finely chopped
Remove pizza dough from refrigerator and let stand at room temperature 20 minutes. Preheat oven to 425 degrees. Lightly dust a large baking sheet with flour or line with parchment paper.
Roll out the dough to a 12 inch round and carefully transfer to prepared baking pan.
Heat olive oil in a large non-stick pan over medium heat. Add sausage slices, mushrooms and onion and quickly sauté for 3-4 minutes. Meanwhile, spread marinara sauce over the pizza dough, leaving a ½ inch border around the edges.
Top the dough with mozzarella cheese then the sausage, mushroom & onion mixture. Sprinkle parmesan cheese over the top and then the parsley. Bake about 20 minutes until pizza is lightly brown on the bottom.
Risotto with Chicken Sausage and Asparagus
1 medium onion, chopped finely
¼ cup butter (1/2 a stick)
1 box (12 ounces) Arborio rice or other short-grain rice (about 1-3/4 cup)
½ cup dry white wine
3 cans (14.5 ounces each) chicken broth
½ tsp. salt
3 Dibrova Chicken & Spinach sausages, thinly sliced into ¼ inch slices
1 box (10 ounces) frozen asparagus spears, thawed, drained and chopped into 1 inch pieces
½ cup grated parmesan cheese
Heat butter in a large, deep sauté pan over medium heat. Add onion and cook, stirring, about 5 minutes until soft. Meanwhile, heat the broth and salt in a large saucepan over medium heat. Add the rice to the onion and cook, stirring frequently until rice is coated.
Add wine to the rice and cook, stirring, until wine is absorbed. Add ¼ cup of the broth and cook, stirring, until broth is absorbed. Repeat process, adding broth until rice is tender, 20-25 minutes.
When rice is almost done, add sausage and asparagus. Stir and cook until heated through. Stir in parmesan cheese and serve immediately.
