Jalapeno Hot Link Omelets
¼ cup milk
Salt and pepper to taste
2 green onions, finely chopped
3 Tbsp. oil, divided
3 links Dibrova Jalapeno Hot Links, cut in half lengthwise, then thinly sliced
1 small onion, finely chopped
½ red bell pepper, finely chopped
1 small zucchini, shredded
1 clove garlic, minced
1 cup Monterey Jack cheese, shredded
Beat together the eggs, milk, salt and pepper. Add green onions and mix again. Set aside.
Heat 2 tbsp. oil in a large skillet over medium high heat. Brown sliced sausage for about 4 minutes until lightly brown. Remove from pan. In same skillet, brown onion, bell pepper, zucchini and garlic for about 4 minutes. Remove from pan, mix with sausages and set aside.
In small skillet, heat remaining oil over medium high heat. Pour in 1/3 of egg mixture and swirl in pan to distribute. Let cook for a minute, then gently lift up edges and let uncooked egg mixture flow under. Flip omelet to the other side and sprinkle with 1/3 cup of cheese and 1/3 of sausage mixture. Fold over and serve immediately. Makes 3 omeletes.
